Ingredients:
1 onion, chopped
2 carrots, grated
2 celery sticks, chopped
3 tbsp olive oil
115 gram/2/3 cup red lentils
1x 400gram can chopped tomatoes
2 tbsp tomato puree
450 ml/ ¾ pint /2 cups stock
1 tbsp fresh marjoram, chopped or 1 tsp dried marjoram
Salt and ground black pepper
1. In a large saucepan, gently fry the onion, garlic, carrots and celery in the poil for about 5 minutes or until they are soft.
2. Add the lentils, tomatoes, tomato puree, stock , marjoram and seasoning.
3. Bring the mixture to a boil then partially cover with a lid and simmer for 20 minutes until thick and soft.
4. Blend into a smooth paste
